This is basically a traditional fish court bullion recipe based in traditional French cuisine. Add tomatoes, peppers and spices, stir and cook until tomatoes are soft, about 2-3 minutes. Super easy and quick! This turned out very well, but found ourselves missing the salt. I used only two fillets since there are only two of us but didn't reduce the cajun seasoning, so it was very, very spicy. Both were yummy! Flounder Piccata.
